1 jar The Blueberry Store’s Blueberry Pie Filling
1 box (2 sheets )frozen puff pastry
1 egg beaten
Powdered sugar for dusting
Granulated sugar for sprinkling
Preheat oven to 375.
Thaw puff pastry according to directions on box. Unfold one thawed sheet on board dusted with powdered sugar so dough doesn't stick.
Cut 4 equal squares with pizza cutter or knife. Continue with second sheet if using.
Place squares on baking sheet lined with parchment or lightly oiled.
Place a good amount( 1 serving spoon)of pie filling in the center of each square ( 1 jar will do 8 squares ).
Pull up each corner to center don't pinch tightly just bring corners together.
Brush with egg then sprinkle with sugar. Bake for 20-25 minutes or until golden brown. Optional: make a lemon vanilla sauce ( recipe below) to pour over. Great with Ice cream too !!
Lemon Vanilla Sauce
2 T butter
1 cup of powdered sugar
1 t vanilla
1 t lemon
1 T lemon zest
2-4 T milk or cream
In small saucepan melt butter. Remove from heat. Stir in sugar until combined. Add 1T of cream at a time stirring between each addition until it is the consistency you like. You may serve at room temperature or may warm up again.
