Blueberry Preserve Recipes

Chicken with Caramelized Onions and Blueberry Preserves
4 chicken breasts
2 large onions
1 tablespoon balsamic vinegar
2 tablespoons Blueberry Preserves
Salt and Pepper
1 teaspoon extra virgin olive oil
1 teaspoon butter or margarine
5 sprigs fresh thyme
½ teaspoon sugar
¼ cup chicken stock

Salt and pepper chicken breasts and brown on stove for 4 minutes on each side.  Add 3 sprigs of thyme and finish cooking in 350 degree oven for about 25 minutes (until internal temperature reaches 170 degrees). While chicken is cooking, slice onions thinly.  Heat olive oil and butter until melted, add onions and cook until dark brown, stir frequently to avoid burning.  Being careful to keep you face away, slowly add the vinegar.  Let it cook down for 1-2 minutes.  Add preserves, 2 sprigs of thyme, sugar, chicken stock, salt, and pepper.  Stir and cook until bubbly.  Spoon over chicken.

Blueberry Mustard Meatballs
1 pkg prepared meatballs (20 or so)
½ cup Blueberry Mustard
½ cup Chili Sauce
2 Tablespoons Blueberry Preserves
Pepper

Mix all together, place in oven for 20-30 minutes until heated through or in crock-pot 2-4 hours.

True Blue Red Chili and Blueberry Chicken Breasts
1 Tablespoon oil
1-1/2 lbs. boneless, skinless chicken breasts
½ cup Blueberry Preserves
2-3 Tablespoons red chili paste (Sambal)
1 -12 oz pkg. frozen corn with red and green peppers
1 Tablespoon fresh cilantro, chopped
Salt and pepper

Sauté chicken breasts in oil until cooked through and browned. Remove from skillet.
Mix True Blue Preserves, chili paste, salt, pepper, corn and pepper blend in skillet and cook until warm and bubbly.  Remove from heat stir in cilantro.
Serve chicken on top of the corn, pepper blend.

Blueberry Mahi Mahi Kabobs          
1lb Mahi Mahi Filets (or other firm mild fish)
½ Cup Prepared Pesto
2 Teaspoons Blueberry Preserves
Assorted Veggies for Kabob (Choose at least two): Tomato, Onion, Mushroom, Zucchini

Prepare selected veggies and fish filets to be skewered by cutting in to 2” pieces.  If using wood skewers make sure to soak them for 30 minutes before using.  Begin making skewers alternating between fish and veggies. 

Mix pesto and Blueberry Preserves together in a small bowl.  Use this mixture to baste skewers while they bake.

Grill or broil skewers on medium heat, about 5 minutes per side or until the fish is done.  If you prefer, you may bake them in a preheated oven (350 degrees) for about 5 minutes on each side.
